With a rich tomato sauce and little bombs of ricotta, these delicious veggie balls are best served with couscous, rice or stuffed into pitta breads with salad.

VEGGIE "FISH FINGER" SANDWICHES

A golden mix of mashed potato, corn, peas and any leftover roast veg you have to hand – all breaded and fried into moreish crispy ‘fingers’. This recipe is so versatile – just make it your own and serve up your little gems in buns with lettuce.

Filled with grilled veg, cumin-fried black beans and fresh coriander, then topped with cheese and baked until bubbling and golden, this Mexican classic is super comforting. It’s a lovely Friday night dinner, served with a crisp green salad.

Jamie’s recipe for fragrant, veg-packed pilaf is good for you, easy to make and absolutely delicious – what’s not to love? Chickpeas add a bit of bite and their fibre content will keep you feeling nice and full.

Everyone loves a classic traybake! Keep it fresh by combining roasted ingredients with fresh ones and top them with a good sauce or pesto. You can use a spiraliser to create the courgette tangles, but a julienne peeler will also do the trick.

These veggie burgers are packed with protein, so they’re a great choice if you don’t eat meat often or at all. Oozy mozzarella, punchy balsamic onions and a tangy, crunchy slaw make this dish a weeknight winner, and you can whip it up in under 45 minutes.
