Colourful, exciting, vibrant and delicious, these meat-free meals are full of tasty goodness.

Here’s our pick of the best, with a mixture of quick dinners and great batch cooks to ensure you’re covered, however much time you have to spend in the kitchen.

Super-easy and quick to rustle up, this is a great one for using up any leftover veg you have in the fridge. Top with a runny fried egg and lots of chilli sauce to really get those tastebuds going.

The humble cauliflower is really high in vitamin C and folic acid, both of which aid psychological function, helping us to think properly. Char it on a griddle pan, then serve on smooth white bean mash with cheat’s pesto and you’ve got yourself a flavour-packed meal with minimal effort.

With creamy aubergines, sweet tomato sauce and bombs of ricotta tossed through rigatoni, this is a comforting Italian dish that’s easy to whip up in under 30 minutes. Ricotta is also high in calcium, a nutrient vital to keeping our teeth and bones nice and strong – bonus!

With gorgeous runny eggs, fried in a temper of fresh ginger and garlic, then served with a spiced butternut squash daal, this is a scrumptious weeknight dinner from Jamie’s latest book, Everyday Super Food. With plenty of protein and nutrients from the red lentils, it’s super-healthy too. Enjoy with coriander and lime-spiked yoghurt.

With roasted sweet potatoes, plenty of beans, vegetables and lovely spice, this great alternative to chilli con carne is healthy comfort food at its best. If you like it really spicy, use hotter chillies then counter that heat with a good dollop of chunky guacamole on the side.

This chickpea and sweetcorn burger is full of delicious spices, herbs and a hit of lemon zest. Wedged into a lovely fresh bun with slices of ripe tomato and a good dollop of ketchup, it’s an epic midweek meal.
