Happy Pear’s Irish stew with root veg

Irish brothers David and Stephen have created a nourishing veggie stew and kale colcannon mash recipe. Hearty root veg and lentils make this a super-satisfying dish that perfectly complements the creamy kale and spring onion mash.
This lovely little dish makes a delicious starter, or a light lunch. You need to use really dry potatoes, so, if you’re not using leftovers, be sure to let your spuds cool so they lose as much moisture as possible before starting the recipe.
Start the day the Irish way with a toasted slice of soda bread, drizzled with olive oil and topped with a beautiful piece of fish. Add a perfectly poached egg, and you’re laughing.
