Although it can be tempting to hit the snooze button in the morning, you can’t underestimate the importance of making time for a good, nutritious breakfast.
Not only will it set you up for the day, help you concentrate, and help keep you full till lunch, it’s also an opportunity to get a mega-boost of macro- and micronutrients. These recipes are fuss-free, delicious and packed full of the good stuff to get you going in the morning.
Granola is a great way to enjoy all the different types of dried fruits, nuts and seeds that you might not otherwise get in your diet. Making your own means you can control exactly what you put in it, and tweak it until it’s just right for you. Granola is also the perfect portable breakfast – once cooled, tip it into a tub or large jam jar, then take it to work with a pot of yoghurt and a couple of punnets of berries and you’re sorted for a good few days.
Cannellini beans are a brilliant source of protein, fibre and vitamin C, as well as magnesium – the mineral we need to make our muscles work properly. Fried with fennel seeds until charred and popped, then cooked with the eggs, macerated cherry tomatoes and fresh basil, this is a five-star brekkie or brunch that just happens to be healthy, too. Top with some quality balsamic vinegar or fiery chilli sauce (or both!), if you like.
These little pots are a deliciously different way to start your day. Hazelnut milk is full of vitamin B12, which helps you stay alert, while black rice is packed with antioxidants. Make these over the weekend and keep them in the fridge for a grab-and-go breakfast with style.
This simple breakfast can be knocked together in just 15 minutes flat, and is full of goodness. Naturally sweet, lightly spiced with cinnamon and nutmeg, and served with lovely, crunchy pistachios that are great for aiding good digestion, this tasty number is a sure-fire hit.
Beautiful poached eggs are always a winner and provide plenty of good protein to set you up for the day ahead. Once you’ve mastered the technique (watch Jamie’s top tips on Food Tube), it’s one of the simplest and quickest things you can do in the morning. Served with wholemeal toast, and a tiny pinch of sea salt and black pepper, there is nothing better.
Porridge is a classic comforting breakfast that just happens to be packed full of the good stuff, too. Get creative with your toppings and let the kids choose their own – chopped fresh fruit, nuts, seeds or a sprinkling of cinnamon are all delicious and nutritious.
