How to make breadcrumbs (and cut food waste too)

Breadcrumbs are a magic ingredient that I couldn’t live without. They bring incredible to texture to creamy pasta dishes and potato-topped pies and are a great vehicle for flavourings. Just a light dusting can transform everyday dishes with very little effort.

Making your own is cheaper than shop-bought, and will help you to reduce your food waste. So, next time you find yourself at the stale end of your loaf don’t bin it, blitz it!

HOW TO MAKE BREADCRUMBS IN 4 EASY STEPS

You’ll need:

1 loaf of stale bread

Equipment:

food processor or blender

clean, dry airtight container

What to do with breadcrumbs?

Now you can use your fine breadcrumbs to coat fish for easy homemade fish fingers But that’s not all:

Extra crust

Use fine stale breadcrumbs instead of flour to dust your baking tray before adding the pizza dough. It stops the dough sticking and gives double crunch.

Herby topper

Whiz up tough crusts into coarse breadcrumbs, spread on a baking tray and sprinkle with olive oil, sea salt, black pepper and your favourite herbs, then toast under the grill until golden. Sprinkle over salads, pasta,soup, risottos or stews for beautiful seasoning and texture.

Lighten burgers and meatloaf

Use fine breadcrumbs in meatloaf and burger recipes to bind them and make the meat go further. Flavour the breadcrumbs with herbs and spices for an extra flavour kick.
