How to make meals veggie or vegan

Adapting straightforward, principle recipes is just one way to incorporate more meat-free meals into your week. Thankfully, it only takes a little imagination and a few good recipes to rustle up tasty veg-packed dishes. Our selection of easily adaptable recipes are so delicious, you won’t even miss the meat.

Embrace the power of veg in this easy pasta recipe by swapping out the prawns for pan-fried mushrooms, or roasted peppers (simply halve and deseed, then roast at 180°C for 30 minutes, then roughly chop). If you fancy vegan pasta, use a Parmesan-style hard vegan cheese.

Replace egg noodles with rice vermicelli noodles or thicker wheat noodles in this delicious Southeast Asian-inspired laksa. Drop a few cubes of silken tofu into the broth for a protein-packed vegan meal.

Veggie or vegan sausages work a treat in this flavour-packed fakeaway. A mozzarella-style vegan cheese also eats really well here.

Meat-free kebabs are a great addition to any barbecue. Simply swap in chunks of halloumi, sourdough bread, or a mixture of veggies cut into bite-sized chunks in place of the chicken. Have fun with it!

Easily transform this veggie pasta into a vegan dinner winner by swapping the ricotta for celeriac slices or a head of cauliflower, quartered. Sliced courgettes or aubergines would also work brilliantly.

There’s no need for steak in these sizzling burritos – sweet potato is a super-tasty substitute. Simply scrub and roast a sweet potato at 180°C/350°F/gas 4 for 1 hour 20 minutes (or scrub, prick and cook in the microwave for 10 minutes, or until soft), then scoop out the flesh, and embellish with griddled peppers, sliced avocado, or crumbled feta cheese.

This principle pie recipe is a brilliant vehicle for a mixture of beautiful veggies – think celeriac, spinach or leeks, or butternut squash, new potatoes and cherry tomatoes. You could even crumble in a little blue cheese, or Cheddar, if that’s your thing!
