How to make yoghurt bark

Quick, easy and utterly delicious, frozen yoghurt bark is the perfect snack or dessert to enjoy whatever the weather.

Yoghurt bark is one of our favourite fun snacks. Simple to make and flexible enough to suit all tastes, it’s one of those recipes you can have in your repertoire to satisfy even the fussiest of eaters. Winner!

The basic yoghurt bark recipe takes just 10 minutes to whip up, using creamy Greek-style yoghurt and a handful of other ingredients. Jazz it up with your favourite toppings – check out some of our bright and beautiful suggestions below – pop it in the freezer to set and you’re laughing! Get the kids involved for a fun weekend or after-school activity that tastes good, too.

The basic yoghurt bark recipe

Serves 6

Total time: 10 minutes, plus freezing

Ingredients

  • 250g Greek-style yoghurt
  • ½ teaspoon vanilla bean paste
  • 1 tablespoon runny honey
  • Your choice of yoghurt flavouring, such as mint leaves, blackberries
  • Your favourite toppings, such as blackberries, blueberries, cherries, banana, pistachios, peanuts, caramel sauce

Method

  1. Line a 20cm x 30cm baking tray with a sheet of greaseproof paper.
  2. Pop the yoghurt, vanilla bean paste and honey in a small food processor and blitz to combine – you could also do this by hand in a bowl.
  3. Add your choice of flavour to the mixture (see below) and blitz or stir to combine.
  4. Evenly spread the mixture across the prepared baking tray, to about the thickness of a £1 coin.
  5. Prepare your choice of topping(s) and scatter over the yoghurt bark.
  6. Freeze for at least 4 hours, or until firm, then snap into pieces and serve immediately. The bark will last in the freezer for up to 7 days in a sealed container.
