The ultimate egg recipes

March 1, 2019 • In Egg, Breakfast & brunch

These back-to-basics recipes take you through the essential techniques for perfect scrambled eggs, beautiful boiled eggs and spot-on poached eggs.

With these failsafe egg recipes up your sleeve, you’ll be cooking eggs exactly how you like them, every time. The important thing to remember is to always aim to use super-fresh, organic or free-range eggs at room temperature.

STEP-BY-STEP: PERFECT POACHED EGGS

Before you start, make sure you use the freshest eggs possible. You can tell whether an egg is fresh by cracking it on to a saucer. If the yolk stands up and the white isn’t watery, it’s fresh as a daisy. It’s also important you bring the water to a gentle simmer, but not a rolling boil – if the water’s too lively, your eggs won’t cook properly.

For an unbeatable breakfast or brunch, serve your poached egg on grilled asparagus, with shavings of Parmesan cheese and fresh mint sprinkled on top; or keep it simple on a buttery, toasted muffin.

Now you know the basics, Jamie explains how to take this classic method in three directions – the basic poach, the one with asparagus, and a super-clever cheat’s tip.

STEP-BY-STEP: PERFECT SCRAMBLED EGGS

Scrambled eggs can be one of the most fantastic, luxurious breakfasts around if you remember a few key things: always use really fresh free-range or organic eggs and good-quality butter, and always keep the eggs moving slowly over a low heat.

Do this and you’ll get luscious, buttery, creamy scrambled eggs every time.
