About the recipe
You can also use this mixture to make 12 large cupcakes or 24 little ones, but remember to reduce the cooking time to 15–20 minutes. You can easily freeze these complete with icing and defrost an hour or so before they are needed.

Cake
450ml rice milk
1 tablespoon cider vinegar
300g caster sugar
300g gluten-free self-raising flour, sifted
100g cocoa powder, sifted
1 tablespoon gluten-free baking powder
1 teaspoon bicarbonate of soda
¼ teaspoon xantham gum
pinch of salt
160ml sunflower oil
2 tablespoons vanilla extract
Icing
225g dairy-free
sunflower spread
225g icing sugar, sifted
50g cocoa powder, sifted
100g dairy-free dark chocolate (70% cocoa)
To decorate
Dairy-free chocolate buttons or fresh berries
