Ingredients

unsalted butter, for greasing

3 tablespoons golden syrup

1 large egg

1 teaspoon baking powder

2 teaspoons ground ginger

75g soft dark brown sugar

1 orange

150ml whole milk

1-2 teaspoons vanilla extract

175g plain flour

75g vegetable suet or suet

Method

  1. Grease a 1-litre pudding basin evenly with the butter. Drizzle in the golden syrup, going up and down the sides.
  2. Place the egg, baking powder, ground ginger and sugar into a large mixing bowl.
  3. Finely grate in the orange zest, squeeze in the juice and beat together, then slowly stir in the milk and vanilla extract. Mix in the flour, suet and a pinch of sea salt until it comes together.
  4. Pour the mixture into the basin, then cover with greaseproof paper, tying it in place with string.
  5. Cook in the microwave on a medium heat (750W) for 12 minutes. Let it stand for 10 minutes before turning out.
  6. Delicious served with an extra drizzle of hot golden syrup and a dollop of cream or custard.
