Go on, take a mouthful, and just try not to say mmm… Dulce de leche never sets really hard – it’s smooth, creamy and complements the hot, crunchy fritters. This recipe makes 300ml of dulce de leche and 1 litre of ice cream – you can make these in advance. You won’t use all the dulce de leche so keep the leftovers.

DULCE DE LECHE
¼ teaspoon bicarbonate of soda
500ml goat’s milk
500ml cow’s milk
200g caster sugar
1 stick of cinnamon
ICE CREAM
1 vanilla pod
500ml single cream
2 large free-range egg yolks
50g caster sugar
200g dulce de leche
SWEET FRITTERS
3 teaspoons ground cinnamon
50g caster sugar
20g icing sugar
1 large free-range egg
150g plain flour
100ml whole milk
1 teaspoon baking powder
sunflower oil
