Spinach, tomato & lemon rice
About the recipe
This is a classic Lenten Greek dish, and can be as simple or elaborate as you like. Simplicity can be wonderful but I do like to add a few more ingredients to my spanakorizo; then I'm not reliant on the flavour from super-sweet summer tomatoes and it becomes a year-round dinner.
Recipe From
2 onions
2 cloves of garlic
1 leek
4 spring onions
75ml olive oil
400g frozen spinach
2 tablespoons tomato purée
1 heaped teaspoon sugar
¼ teaspoon smoked paprika
200g long grain rice, rinsed
500ml passata
2 vegetable stock cubes made up to 750ml stock
1 lemon
½ a bunch of dill (10g)
