Octopus is really simple to do! Follow my recipe and you will wonder why you haven’t tried it before. The lovely Spanish romesco sauce works really well with the caramelised octopus.

1 x 1kg octopus (double sucker species), defrosted if frozen, from sustainable sources
olive oil
1 onion
4 cloves of garlic
3 bay leaves
3 teaspoons sweet smoked paprika, plus an extra 2 teaspoons to garnish
ROMESCO SAUCE:
20g white bread
3 red peppers
200g ripe plum tomatoes
30g blanched almonds
30g skinned hazelnuts
2 cloves of garlic
2 tablespoons sherry vinegar
1 bunch of spring onions
400g tin cannellini beans
