TADKA DAAL
200g yellow split peas
2 tablespoons ghee
1 large onion
2.5cm piece of ginger
2 cloves of garlic
1 fresh green chilli
2 ripe tomatoes on the vine
½ teaspoon turmeric
½ teaspoon chilli powder
½ a lemon
optional: 1 fresh red chilli
optional: mustard seeds
ALOO GOBI
2 cloves of garlic
1 large onion
ghee or vegetable oil
2 potatoes (300g)
2 teaspoons cumin seeds
½ teaspoon turmeric
200g cauliflower
100g peas
1 teaspoon kasoori methi (fenugreek leaf)
2 teaspoons ground coriander
2 teaspoons garam masala
½ teaspoon chilli powder
optional: ½ a bunch of fresh coriander (15g)
CHILLI PANEER
3 spring onions
2 fresh green chillies
5cm piece of ginger
2 cloves of garlic
1 small red pepper
ghee or vegetable oil
2 tablespoons soy sauce
2 teaspoons rice wine vinegar
1 teaspoon hot chilli sauce
1 teaspoon caster sugar
1 teaspoon cornflour
1 x 226g pack of paneer cheese
RAITA
1 cucumber
2 ripe tomatoes on the vine
2 fresh green chillies
200g natural yoghurt
1 teaspoon ground cumin
PARATHAS
600g strong white flour
olive oil
400ml milk
