Ingredients
1 small onion
1 green or red pepper
1 large potato (400g)
350g higher-welfare lean pork, such as tenderloin or fillet
1½ tablespoons olive oil
2 x 400g tins of chopped tomatoes
1 x 400g tin of cannellini beans
optional: 1 tablespoon paprika
optional: 1 teaspoon bouillon powder
1 sprig of fresh flat-leaf parsley
Top Tip
If cooking for your baby, leave out the paprika and bouillon powder until after you’ve have taken out your baby’s portion. Allow to cool, then chop or mash to the desired consistency.
Method
- Peel and finely chop the onion. Deseed and slice the pepper, then scrub and dice the potato. Chop the pork into bite-sized pieces.
- Heat the oil in a large pan on a medium heat, add the onion and pork and fry for 5 minutes, or until the meat is browned all over and the onions are starting to soften.
- Add the pepper and potato and fry for 1 or 2 minutes, then pour in the tomatoes.
- Drain and add the beans, followed by the paprika and bouillon powder (see tip). Bring to the boil, then reduce to a simmer for 35 to 40 minutes, or until all the ingredients are nicely cooked.
