Roasted veg lasagne

Grilled sweet potato, roasted red pepper and baby spinach, layered with tomato ragù, free-range egg pasta and cheesy béchamel, then topped with crushed pumpkin seeds. This meat-free version of the classic was inspired by a recipe Jamie cooked with comedian John Bishop on the C4 series Friday Night Feasts, and is packed with deeply savoury, satisfying flavours.
