10 lasagne recipes to suit every occasion

July 25, 2024

Rich, creamy and incredibly tasty, lasagne is a true crowd-pleaser. You just can’t beat sitting down with loved ones and diving into this absolute treat of a dish, so we’re celebrating 10 of our favourite lasagne recipes, from sumptuous summer veg lasagnes to one-pan recipes that throw the rulebook out the window.

Originating in Italy, lasagne is the perfect way to champion seasonal vegetables, meats, fish or cheese. Alongside the classic beef lasagnes we all know and love, these recipes reframe the staple dish, using a variety of ingredients that help you to embrace every season and occasion.

So if you want to swap your beef ragù for a creamy spinach and ricotta filling or a summer veg sauce, go for it! Béchamel can be flavoured with anchovies, infused with shellfish and saffron (hello, Creamy seafood lasagne) or turned into an umami-packed vegan sauce with almond milk and mushrooms – you decide!

Take your classic ragù up a notch with an extra-rich sauce made with beef shin, pork belly and pancetta, plus chilli for a hit of heat. Layer it up with butternut squash and a bubbling white sauce that’s spiked with anchovies for delicious depth of flavour. This is a very special Sunday lunch.

With no white sauce and no intricate layering this recipe is a game-changer, turning soft, silky aubergine into a sumptuous filling with the help of garlic, chilli, sage and lemon. Topped with crispy sage leaves and almond crunch, this is a cheesy, oozy, meat-free lasagne that really delivers on flavour.

Nutritious and easy on the wallet, this batch-cook family favourite will leave you with plenty of extra ragù to throw in the freezer or transform into spag Bol later in the week. Feel free to bulk out your Bolognese with extra seasonal veg if you have any that needs using up.

Beautiful rustic layers of lasagna and nutritious veg that’s cooked, baked and served in just one pan! This speedy, budget-friendly take on lasagne makes the most of handy frozen veg. With a bubbling sauce and crunchy topping, this is a great midweek veggie dinner.

Go the extra mile and impress your loved ones with this showstopping seafood lasagne. It’s layered with homemade lasagna sheets, lovely lemon sole and salmon, a saffron and mussel Béchamel sauce, then topped with king prawns and Parmesan for good measure.

Make a vegan alternative to Béchamel using almond milk, vegan Cheddar and wild mushrooms for a creamy sauce that’s packed with umami flavour. Layered up with pasta, more mushrooms and a rich tomato and Chianti ragù, this is an epic lasagne that’s well worth the effort.

For a heavenly dinner that makes the most of a leftover roast, try this lasagne recipe. Simmer any leftover cooked meats with fragrant veggies, a little garlic, some herbs, red wine and tomato; and you’ll be onto a winner. Pop your mix between sheets of homemade pasta, then top with creamy mozzarella, Parmesan and basil – yes!

Creamy ricotta cheese and spinach are a perfect pasta combo – pair them with sweet, soft leeks and tomato sauce for a gorgeous veggie bake you’ll want to batch-cook and freeze for a rainy day. It’s easy and ready in less than an hour!

With a summery base of peppers, courgettes and aubergines; combined with lovely mixed beans; this is a satisfying veggie dish to feed a crowd. This recipe is from head chef Jav, of the amazing Nishkam Sikh Welfare & Awareness Team. Shoutout to their work, feeding more than 3,500 homeless and vulnerable people across the UK every week.

With smoky aubergine, chunks of fennel-roasted squash, a creamy mushroom sauce and plenty of Cheddar and Parmesan, this lasagne is turbo-charged with flavour. Serve it with a super-fresh, homemade pesto topping – divine!
