We love any opportunity to celebrate the gorgeous dishes and flavours of Mexico. Add a touch of carnival to your day with these brilliant Mexican-inspired recipes.

Beautiful breakfast tortillas

Silky eggs, fresh avocado, delicious ripe tomatoes, hard cheese and Jamie's homemade chilli sauce. This epic tortilla is great for breakfast, brunch or a speedy lunch.

This simple little salad can be quite extraordinary, but you’ve got to season it with that Mexican spirit by being brave with the lime juice, salt and chilli, until it’s singing in your mouth.

Mole is a Mexican classic – a thick, dark sauce made with a medley of sweet and spicy chillies, rounded out with bitter chocolate. Served with tender chicken and homemade tacos, it’s simply sublime.

Jamie serves these incredible fish tacos with all the trimmings – chunky guacamole, fruity pineapple salsa, garlicky sour cream and a jalapeño-spiked slaw. They’re so, so good.

Tamales can be sweet or savoury – they’re basically filled dumplings. If you can’t get hold of cornhusks to wrap them in, greaseproof or wax paper will also do the trick.
