Exciting food doesn’t have to wait until the weekend! With a few quick weeknight recipes and air-fryer wonders in your repertoire, it’s easy to mix up your midweek meals and add some joy back into those WFH lunches or family dinners.

To celebrate the release of Simply Jamie and the journey to tastier midweek meals for everyone, we’ve rounded up some of our favourite quick and easy recipes that are sure to impress.

Sweet peas are teamed with tangy pecorino and soft potatoes to create a flavour-packed pasta that can be on the table in just 30 minutes.

Crisped-up, herby salmon is paired with air-fried greens and cheat’s lemony potatoes, then topped with a deliciously quick tangy salsa for a genius midweek meal that takes minimal effort.

This 15-minute wonder packs an added veg boost into the classic carbonara recipe. If asparagus isn’t in season, feel free to swap your favourite seasonal green into that gorgeous velvety sauce – have fun with it!

25 years on from The Naked Chef, this old-school traybake still stands the test of time. Creamy beans and herby chicken are steamed in foil until beautifully cooked and ready to serve straight out of the bag. Lovely!
