Recipe From

Ingredients

4 regular flour tortillas

2 free-range eggs

2 teaspoons chilli & garlic, or your favourite, curry paste

½ a cucumber

1 lime

2 spring onions

4 tablespoons natural yoghurt

2 tablespoons desiccated coconut

Method

  1. Preheat your sandwich toastie machine. Carefully push 2 tortillas into the base of the machine, making a nice dip in the middle of each one, then gently crack in the eggs.
  2. Spread the remaining 2 tortillas with the curry paste, then flip on top of the eggs, carefully fold in any overhang, seal the machine, and toast for 10 minutes, or until golden.
  3. Very finely slice the cucumber, toss with half the lime juice and a good pinch of sea salt, and leave to quickly pickle. Trim and finely slice the spring onions, mix most of them into the yoghurt with the coconut and remaining lime juice, then season to perfection with salt and black pepper.
  4. Trim and slice up the quesadilla toastie, spoon over the flavoured yoghurt and quick-pickled cucumber, then sprinkle over the rest of the spring onions.
