Ingredients

1 x 250g round Camembert cheese

1 small clove of garlic

2 sprigs of fresh thyme

olive oil

½ a batch of macerated blackberries

Method

  1. Preheat the oven to 180°C/350°F/gas 4. Unwrap the Camembert, then return it to its base. Use the tip of a sharp knife to score the surface of the cheese like a checkerboard. Peel and thinly slice 1 small clove of garlic, strip most of the thyme leaves and stuff both into the gaps in the cheese. Drizzle with a little olive oil, place on a baking tray and bake for 15 minutes, or until melty and lightly golden.
  2. Spoon over the macerated blackberries and return to the oven to warm through for 3 to 5 minutes, or enjoy at room temperature. Sprinkle over the reserved thyme and serve with bread and crunchy veggies.
